Are your knives really made in Canada?
Yes. They are made entirely by hand in our workshop in southern Quebec. Our blades are forged from San Mai billets, which we also make in house. We source our raw steel from Sweden, handmade acetate sheets from Italy, and Richlite from the USA.
What is the difference between HŌN knives and Vachon knives?
Noah Vachon has been making high end culinary knives for over 10 years. His personal work is available under the name Vachon Knives, and he continues to offer one of a kind and custom pieces under his name. HŌN knives are made by Noah to the same standard, but their standardized designs allow for higher volume production with no compromise in materials or fit and finish.
Are HŌN knives Japanese knives?
HŌN knives are not traditional Japanese knives, but they share several features common to Japanese knives. Our blades are made from high quality, high carbon steel, heat treated to be very hard (61-63 HRC), and ground very thin. They perform much like a Japanese blade.
Will my knife look exactly like the one pictured in the shop?
Because every blade is forged by hand, the pattern created by the layers of carbon steel, nickel, and stainless steel varies naturally. The pattern is unique on every blade, like a fingerprint. Blade sizes and handles are consistent.
Can I customise my order?
Custom blade and handle options are not available during the pre-sale, which runs until December 1, 2026. We expect to offer customization in the near future.
Can I order a set but choose two different handles?
Yes. Our point of sale system isn't set up for this yet, so please note the two handle colours in the comments when you place your order and we'll be happy to accommodate you.
Can I order a knife as a gift?
Absolutely! If your purchase will be delivered directly to the recipient, let us know and we will provide gift wrapping and a personal message. If you would like to give a knife but can't decide which one to buy, we can prepare a gift certificate.
Will my pre-order ship in time for Christmas?
Yes! All pre-order knives will ship before December 10th, 2026, which allows time for them to arrive before Christmas.
How should I care for my knife?
Handmade knives should never go in the dishwasher. Wash by hand with a soft sponge (no rough scrubbing) and dry thoroughly before putting the knife away. An occasional light coat of mineral oil helps protect the blade. For sharpening, we recommend water stones or diamond stones.
